Production Supervisor Overview

The production supervisor is responsible for the day to day operation of the production department, products, product quality, and the employees for the assigned shift. The production supervisor reports directly to the production manager.

The production supervisor enforces all aspects of food safety, quality, and legality.





  • Food Safety Responsibilities



    • Ensure that the bakery is compliant with all federal, state, and regulatory laws.
    • Enforce all standards, rules, and regulations.
    • Ensure work area is cleaned throughout the shift. Walkthroughs must be performed with incoming/outgoing supervisor. Proper hand-off is required.
    • Ensure next shift is set up properly.
    • Perform facility food safety inspections daily. Correct any production issues that arise from the inspections.
    • Ensure that Good Manufacturing Practices are followed by all employees. Address GMP issues with employees as needed and be the example to follow.
    • Perform Metal Detector Checks hourly & Check Metal Detector logs once per day. Supervisor sign-off each shift.
    • Perform line checks to look for possible foreign material contamination.
    • Enforce all aspects of food safety, quality and legality including but not limited to -

      • Following all Food Safety HACCP policies and procedures, including all prerequisite programs.
      • Product scoring - Poor or inadequate product must be reported to the QSM and Production Manager. Make adjustments as needed.
      • Coding - all product must be accurately coded. Code must be legible and correct. Check BBD for accuracy. If a discrepancy occurs, then the product needs to be corrected or discarded.
      • Quality Checks - Any data points that are outside of the upper or lower specification limits should be investigated and corrected. Underweight product must never be shipped for any reason.
      • Mix Time/Temperature - Follow posted standards. Any changes must be documented and reported to the Production Manager and the Operations Manager.
      • Quality Check Points - sponge temperature, temperature out of mixer, temperature out of proofer, temperature out of oven, temperature at slicers. Any variances out of spec need to be reported to QSM & Production Manager
      • Weight checks - verifying bag weights are met, correcting over/under weight problems, discarding underweight product





    Personnel Responsibilities




    • Allocate personnel as needed to run shift. Monitor and limit overtime when not needed.
    • Keep lines running as efficiently as possible and ensure all areas are cleaned and clear of unsafe conditions. Investigate any breaks or stoppages in line.
    • Ensure all employees are GMP compliant and in proper uniform for shift.
    • Team work and team building. Address any employee concerns efficiently.
    • Periodically spot check every position (from mixer all the way through the process to the floor men) to ensure that employees are correctly performing their job function.
    • Follow up on training of employees. All evaluations are complete and concise conversations have been had with probationary employees.

      Production Management



      • Review wrap sheets and establish a running order - communicate with transportation and shipping to ensure that all orders are filled in a timely manner. Limit shortages and overruns by working with Shipping to see what is needed.
      • Put doughs/sponges counts into computer
      • Communication with all departments, specifically regarding - production run schedule, sanitation of the bakery, mechanical downtime and related maintenance issues, quality issues
      • Schedule and conduct shift meetings for the assigned shift.
      • Maintain accurate downtime records. Discuss downtime issues with maintenance supervisor prior to the end of the shift. All pertinent info added into Ignition.
      • Respond to maintenance calls when available. Supervisor should make an effort to be at every downtime issue until resolved and running.
      • Complete shift log for your shift - read other supervisor shift logs to keep up to date on bakery issues.
      • Periodically check staging areas for product that needs to be loaded or discarded.
      • Check all necessary paperwork - Walk your area throughout shift and check any paperwork for inaccuracies or missing info. Any info crossed out needs a single line strikethrough and initial. Do not scribble out info.



      Product Quality



      • Suggest & help implement ideas to improve product quality and efficiency.
      • Ensure production process is in range

        • Is product top quality? If so, what needs to change? Can product ship or should it be discarded?
        • Cosmetic attributes- Is product mixed, proofed, and baked properly? Color, Bake, Structure, Splits, General appearance.
        • Coding
        • SPC Quality Checks
        • Mix Time/Temperature
        • Document minor formulation changes on the supervisor shift log and Deviation Board.

Qualifications
Experience
5+ years of experience in the food manufacturing industry (preferred).
Effective written and verbal communication skills.
Demonstrated knowledge in pest control.
Read, comprehend and practice necessary safety procedures, and signs.
Working holidays and weekends is frequently required.
Arrive to work on time consistently.
Must be 18 years or older. (preferred)
